Turkey Veggie Chili In The Instant Pot (DF & GF)
Are you looking to spice up your dinner meals? This is a great go to meal that is a family favorite. Plus, this Turkey Veggie Chili is full of nourishment for your body!
Makes: 4 servings
Prep time: 15 min
INGREDIENTS:
1 pound Fosters Farms free range turkey raised on organic feed, no added antibiotics, no hormones, no steroids
1 tbs Olive Oil
1 Onion
1 Bell Pepper
1 Squash
1 Zucchini
10 Mushrooms
1 15oz can of Organic Corn
2 15oz cans of Organic Kidney Beans
1 15oz can of Organic Black Beans
2 large (29oz) cans of Organic Tomato Sauce (check the ingredients for sugar! A lot of companies tend to sneak it in there!)
2 tbs Chili Powder
3 tsp Garlic (minced or powder)
1 tbs Cumin
Salt & Pepper
Optional toppings:
Avocado

INSTRUCTIONS:
Put instant pot on sauté mode
(If you aren’t using instant pot then place frying pan on medium-low heat)Add about a tablespoon of olive oil
Chop one onion and bell pepper, add to pan or instant pot to let caramelize for about 5 min
Season turkey with chili powder, garlic, salt, pepper and lightly brown it
Add two 29 oz cans of tomato sauce (it’s better to have sauce vs diced tomatoes because the seeds and skin contain lectins)
Roughly add 2 tbs of chili powder, 1 tbs cumin, and 3 tsp garlic or 3 cloves minced garlic
If you like it spicy add a dash of cayenne! 🌶
Chop up large squares of squash and zucchini then add it to the mix
Chop some chunky mushrooms, I love mushrooms so I did a lot. Cut them larger if you want, chunky chili is where it’s at! (in my opinion)
Add a can of corn and let things simmer for about 10 minutes
Now add your beans! Since they’re canned beans they will heat quick! About 10 minutes will do the trick
Let things simmer on low for a bit or dig in immediately. Remember to add your toppings!
If you’re feeling crunchy have it with some tortilla chips! So good! Try to find chips that aren’t fried in canola or seed oils! We love the Siete Chips.
Note - This chili freezes well! A quart sized mason jar full will feed two people so if you want chili that night, stick the frozen jar in the fridge to let thaw. If you want to pack it for your lunch, heat it up and stick it in a thermos!
