Chocolate Chunk Cookies (DF & GF)

Makes: 4 servings

INGREDIENTS:

  • 1/2 cup Coconut Oil (104.5g)

  • 2 tbs Flax (16g) + 1/2c Oat Milk (120g)

  • 1 tsp Vanilla (4.2g)

  • 3/4 cup Cassava Flour (105g)

  • 1/4 cup Coconut Flour (30.8g)

  • 1 tsp Baking Soda (4.8g)

  • 1/4 tsp Salt (1.4g)

  • 1 1/2 tsp Monk Fruit Powder (2.1g)

  • Chocolate Chips (measure these w/ your heart and choose the chocolate chips you prefer!)

INSTRUCTIONS:

  1. Turn oven to 350 and place parchment paper onto pan

  2. Melt coconut oil on low

  3. Make flax eggs by adding @malkorganics oat milk to flax meal, mix then sit for 10 minutes

  4. Mix in vanilla with flax eggs

  5. Mix all dry ingredients

  6. Add melted coconut oil to wet ingredients

  7. Add dry ingredients to wet

  8. Throw in some chocolate chips or chunks of your choice. (I chopped up a keto @evolvedchocolate bar.)

  9. Form and flatten dough into cookie shape (if you put dough into a ball formation that’s how it will come out, these won’t spread like the chemical filled cookies.)

  10. I baked my cookies for 13 minutes but I have found that ovens and glass vs stainless steel trays makes a difference in bake times!
