Paleo Berry Bread (GF & DF)

Who doesn’t love a fresh baked bread?! This bread will amaze you with its delicious berry taste and perfect density!

Makes: 6 servings

Prep time: 15 min

INGREDIENTS:

  • 2 Eggs (or use a flax egg ingredient instead)

  • 1 tsp Monk Fruit Powder (1.4g) to make it keto, if you prefer non-keto then do 3 tbs Maple Syrup (60g)

  • 1 tsp Vanilla Extract (4.2g)

  • 1 tsp Baking Soda (6g)

  • 1 tsp Ceylon Cinnamon (2.64g)

  • 2 cups Almond Flour (224g)

  • 1 scoop Marine Collagen (20g)

  • 1 cup fresh or frozen Blueberries

  • 1/2 cup dehydrated Strawberries

INSTRUCTIONS:

  1. Preheat oven to 350

  2. Melt coconut oil on burner for about 3 minutes.

  3. Mix eggs and vanilla

  4. Measure all dry ingredients and put in large bowl

  5. Mix in coconut oil with eggs and vanilla. Sometimes I let it cool a little but you don’t have to. Immediately after giving these ingredients a quick mix I add the dry ingredients to prevent the coconut oil from cooking the eggs. (I have no idea if the heat from the coconut oil could actually do that to the eggs but it’s my method to the madness.)

  6. Fold in the berries

  7. Line a loaf pan with parchment paper or coat in coconut oil

  8. Pour the mixture into the pan and even it out with a spatula

  9. Add some berries or nuts to the top if you want, I did pecans. Lightly press them in

  10. Bake for 60-65 minutes, poke with a fork or knife to see if it’s done

  11. Let cool for 30 minutes

  12. Slice and enjoy!
