Hearty & Healthy Short Rib Stew

INGREDIENTS:

  • 4-8 beef short ribs

  • 1 onion

  • 2 cloves garlic

  • 4 large carrots

  • 8-10 mushrooms

  • 2 large potatoes

  • Handful of cherry tomatoes

  • 1/8 cup shredded goat cheese

  • 2 cups bone broth

  • 1 cup water

  • 2 tbsp olive oil

  • 1 tbsp worcestershire sauce

  • 1 tsp red wine vinegar

  • 1/2 tsp whole grain deli mustard

  • 1 tbsp sage

  • 1 tsp italian seasoning

  • 1/4 tsp cumin

  • 1 tsp salt

  • 1/4 tsp pepper

  • 1/8 tsp cayenne pepper

  • A few slices of sourdough bread.

INSTRUCTIONS:

  1. Add 1 tbsp olive oil to large pan or pot

  2. Chop onion and garlic and add to pot, let the onion and garlic cook while stirring for about 7-10 minutes on medium until caramelized

  3. While onion and garlic cooks rub the short ribs with 1/2 tsp of the salt and the cumin

  4. Add the remaining olive oil

  5. Make a well in the middle of the onion/garlic and place the meat side of the short ribs face down in the pot and allow to cook for about 5 minutes until they are lightly browned and a small crust has formed

  6. Add the bone broth

  7. Chop the mushrooms and add them to the pot, allow mushrooms to soak up some of the liquid

  8. Add the Worcestershire sauce, the red mine vinegar, the mustard, and the water while stirring, let simmer for 5 minutes

  9. Chop the carrots and potatoes into 1/4 inch pieces and add them to the pot, add additional water if needed

  10. Finely chop the sage and add 3/4 tbsp to the pot along with the remaining salt, the pepper, the cayenne pepper, and the Italian seasoning, let simmer on low for about 45 minutes

  11. Meanwhile heat the sourdough bread

  12. Cut the tomatoes in half, and grate the cheese

  13. Serve in a bowl and top with cheese, tomatoes, remaining sage, and a piece of sourdough! Enjoy your delicious, hearty, and healthy meal that is sure to fuel your body, mind, and soul!
