Peruvian Spatchcock Chicken (GF)

Looking for a delicious hearty and healthy meal? Try this Peruvian Spatchcock Chicken, also known as “Pollo A La Brasa!”

Makes: 6 servings

Prep & Cook Time: 60 minutes

INGREDIENTS:

  • 1 whole chicken

  • 2 cloves garlic

  • ¼ cup tamari

  • 2 tblsp lime juice

  • 1 tblsp fajita seasoning

  • ½ tblsp oregano

Feta Green Sauce

  • 1 cup cilantro

  • 4 tblsp feta cheese

  • 2 tblsp avocado oil

  • 2 tblsp 1 jalapeno 

  • Salt/pepper - pinch of each

INSTRUCTIONS:

  1. Mix the garlic, tamari, lime juice, fajita seasoning, and oregano in a bowl. Marinate the chicken for at least 2 hours and up to 24 hours in the fridge.

  2. When ready, preheat the oven 350 degrees.

  3. Then place chicken in roasting pan and coat with remaining chicken sauce. Roast chicken for 45-60 min depending on size of chicken and until the internal temp reaches 165 degrees in the thigh portion of the chicken.

  4. While chicken is cooking prepare the sauce: place all ingredients besides the oil in a mixer (FIITRAX likes to use the Cuisinart Mixer). When running the mixer slowly, drizzle oil in, then season with salt and pepper. Place sauce in a small side dish.

  5. Once chicken is done, let rest for at least 10-15 min before cutting into pieces to allow the juices to set back into the meat so that you have a flavor packed, juicy chicken to enjoy.

  6. Perfect side dishes include roasted vegetables, potatoes, and even a side of Watermelon Salad!
