Watermelon Salad (GF)

This tasty, fresh Watermelon Salad might turn into one of your meals you and the family have on repeat. Enjoy!

Makes: 6-8 servings

Prep & Time: 10 minutes

INGREDIENTS:

  • Half a watermelon diced into 1” cubes

  • Half a red onion sliced thin

  • Fennel bulb sliced thin

  • 2 tblsp extra virgin olive oil

  • 2-3 tblsp red wine vinegar

  • ¼ cup chopped mint

  • Feta Cheese for garnishing

  • ½ tsp Flakey sea salt 

INSTRUCTIONS:

  1. Place the cubed watermelon, fennel, onion, mint in a bowl.

  2. Then drizzle the oil and vinegar on the inside of the bowl (not directly onto the ingredients) then begin to toss the salad. Doing salads this way with the dressing will help with even distribution of the dressing allowing the salad to pick up the dressing on its own.

  3. Once done, place the salad onto a serving bowl then garnish with chunks of feta cheese and sprinkles of the salt. You can even drizzle the excess vinaigrette on top with a spoon.
